Vital Wheat Gluten – The Other Vegetarian Meat
By Mary Curtis, author of The Practical Vegetarian
Wheat gluten has long been used in Asian cooking - including for mock duck. The legend has it that Buddhist monks in the Far East were looking for a soy alternative when they discovered wheat gluten. As a meat substitute, vital wheat gluten is now catching on here in the West.
Vital wheat gluten should be available in your supermarket in the baking section. A couple of really good brands are Bob’s Red Mill and King Arthur. These brands are also available online at:
Bob's Red Mill Vital Wheat Gluten - Bob's Red Mill Gluten Flour, 22-Ounce Packages (Pack of 4)
King Arthur Flour Vital Wheat Gluten - King Arthur Flour Vital Wheat Gluten - 16-Oz.
